White tea is not fermented - but we still have it because we love it dearly. 
Our variety - Pai Mu Tan or often transcribed as Bai Mudan (白牡丹) differs from other teas in that it is handpicked . A bud is picked with one sprout and two young leaves. The tea therefore consists of full, beautiful leaves with a delicate white shimmer.
 
Due to the high quality of this tea, at least 3 infusions are possible.... and you should definitely do that, because the 2nd infusion is the BEST. In addition to the fine note of the tea, this Pai Mu Tan is also a wonderful way to get tired spirits going again without causing the unpleasant side effects, such as palpitations.
