I grew up on a farm in Upper Austria. Cows, cats and lots of green. Fermentation had always been present, but I was not consciously aware of it. Sauerkraut in the cellar, my mother's home-made cider and vinegar.

Returning to these childhood flavours and memories might have always meant to be my destiny.

But first life had some other stopovers in store: I studied Classical Archeology, spent years in IT, many years. But now it is back to the living organisms. 

The hissing sound of the kraut, the noble white mold around the legume - this is where I want to be.​
