Legumes are difficult to digest. Unless... you ferment them. Protein joy without tummy tucks. Tempeh is mostly made from soy, but we also ferment it by hand in organic quality from runner beans, chickpeas or lentils and amaranth.

 

What is tempeh?

Tempeh is the product of a mold fermentation using the Bacillus Rhizopus Oligosporus. In the course of fermentation, this forms a white mycelium that attaches to and around the legumes and allows them to grow together into a compact cake. The legumes are made easily digestible by the work of the bacteria.

 

Tempeh is 100% vegan and a wonderful source of protein in a vegan diet. But it also tastes great for non-vegans.

 

Thinly slice the tempeh and fry like meat. Either fry in a pan on both sides, fry with or without breading - or place on the hot grill. Don't forget to season - salt or soy sauce - but also similar to meat with a little BBQ sauce or wonderful with our hot seasoning ferments Sriracha or fermented hot sauces. Kimchi or a crunchy salad - the meal is ready.

  • Tempeh from the pan

    Cut the tempeh into finger-thick slices.  Heat the frying oil in a pan and place the tempeh in it. Tempeh loves oil, don't use too little. After 2 minutes flip and sear the second side. Then deglaze with some soy sauce and water. Remove the pan from the heat and toss so that the water and soy sauce soak into the tempeh with the remaining heat.

    Serve. Best with some fermented vegetables or salad. If you like it hot, we recommend our hot seasoning fermentsSrirachaor fermentedhot sauces

     

    Tempeh fried with marinade

    Cut the tempeh into finger-thick slices.

    For the marinade: Mix together 1 tsp soy sauce, 1 tsp maple syrup, 1/2 tsp smoked paprika

    Heat frying oil in a deep casserole. Fry the tempeh slices in bubbling oil. Attention - this is relatively quick. Remove and brush with the marinade.
