Shoyu is a sauce that extracts the taste of grain or legumes through long fermentation. Our dear fermentation colleagues from Upper Austria are doing something very exciting here and enrich the fermentation material with smoked king oyster mushrooms from the Mosberg mushroom manufactory. The result is a sauce with a fine smoky aroma and a deep umami tone. It enhances not only soups, but also vegetable dishes.
