Shoyu is the name of a sauce which, through long fermentation, extracts the taste of a "grain". In this case, the basis is Austrian organic soy, the product is called a light shoyu or light soy sauce.  Pure umami - salt was yesterday, now there is Shoyu. True magic not only in Asian dishes.
