The salt lemon emerged from the need to preserve the many lemons in Morocco. It not only contrasts wonderfully with Moroccan stews, but can also be wonderfully used wherever intense flavors (lamb, mussels) want an opposite pole.

In comparison, our lemons are fermented with little salt and thus retain their citrus pep.
