Schmotzbirnen, Plankenapfel, Landlbirnen and "Behm". Only the native of Upper Austria can be trusted with an appropriate pronunciation . What these local fruit rarities have in common... they don't taste good, at least not when you want to eat them fresh. BUT... fermented it looks completely different. They make a much better must and therefore an interesting vinegar.

 

Our vinegar is stored in wooden barrels and is unpasteurized. It is unfined and thus has a full acid profile.
