Sandor Katz is the man to whom we fermenters owe a lot. Years ago he gathered everything on the subject and wrote it down in his bible "The Art of Fermentation". The Bible is no longer published-  a shame.
 But this small, fine book is like a compressed Bible. Cultural history, recipes ... everything you need to get started on the subject.
