Taste can be argued over. In the end to us contrast is beautiful. This is what we try to demonstrate with our cooking.
Fermented food: A piece of fish liver with fermented pepper flavored with a little salt lemon ... Spicy meets salty and is lined with a strong portion of umami. It's like playing pinball in your mouth. The taste experience shoots from one corner to the other.
Fermentation is a transformational process. The food changes: visually, taste-wse, consistency. When used skillfully, contrast becomes an aroma.
And just like in life, beauty needs contrast to shine.
