Vanilla has a fascinating history. Originally native to South America, it was stirred into cocoa by the Aztecs and others... what more can be said. European colonizers wanted to cultivate it in Europe, but without success. Africa didn't work either until it was realized that only a specific bee, which is not native here (or in Africa), pollinates the flowers.

To this day, vanilla must be hand-pollinated by humans, fermented after harvest, and manually kneaded every day. So, why is vanilla so expensive? That's why.

Our vanilla comes from Madagascar. It not only tastes wonderful in desserts but is also a delightful addition to braised fennel, endives, or kohlrabi...

And we dry the scraped pods and place them in sugar... genuine vanilla sugar.
