Oxymel – Also Known as Sour Honey
Oxymel is a vinegar infusion, and for this version, we use wild, rugged cardoon as the base, refining it with bitter oranges from Burgenland.
Cardoon, a close relative of the artichoke, thrives in our region—though it rewards its grower with a fair share of sharp spines.
The vinegar extracts the delicate bitter notes from both cardoon and bitter orange, resulting in a product that balances the sweetness of honey, the acidity of apple cider vinegar, and the bitterness of cardoon and orange. Together, these ingredients support digestion—while tasting absolutely delicious.
How to Use Oxymel
- As a natural remedy: Take it by the teaspoon, before or after meals.
- As a refreshing drink: Dilute with sparkling or still water, depending on your preference.
