Mugi miso is a very traditional ferment that conjures up something out of the barley that just wasn't there before. The umami paste is very versatile and enriches almost every dish .
Misos are fermented pastes mostly made from legumes. The fermentation unearthes complex aromas that surprise. A teaspoon in a dressing, smear vegetables with it and off to the oven, or just in the cooking water. Miso is also great for marinating meat and fish... everything tastes better if it's made with miso.
