Every year we buy many kilos of bergamot as we use its juice to flavour our drinks. The citrus fruit bergamot is known best though for the fragrant oil that its peel releases. In order not to waste a drop of bergamot aroma we zest the peel, mix it with cane sugar. After drying the sugar - the outcome is this wonderful bergamot sugar.
Use instead of vanilla sugar.
