The coffee bean is covered by the so-called coffee cherry, also known as cascara. This itself contains caffeine, since it is not part of the roasting process, it does not have any aromas characteristic of coffee. Instead, you can use it to brew a tasty, caffeinated tea drink or (as we did) use it as a base for kombucha. Cascara Kombucha... NICE!!!
