Umami Rub: tender chicken with summer tan

I hardly ever eat chicken. The beat up animals out of mass farming ...yak! But on saturdays there is sometimes find a chicken on the farmers market that looks healthy.

Chicken if of high quality is good per se... but if combined with umami rub, water and a little butter... OMG!!!





Umami rub is a mold based cutlure based on barley koji. All meat will massively benefit from a umami rub treatment. The rub will age the meat and tenderzize it. It works with beef, pork, game and fantastically fast with chicken. The rub will work the chicken within 2 hours and out comes the most tender, most beautifully tanned chicken you ever prepared.




Rezept für 4 Personen


1 high quality chicken

250 g Umami Rub

4 carots

2 onion

1 lemon

30 g butter

salt


Take the chicken and cover with the umami rub. Chicken should be at room temp. Let it sit in the tub for 2-3 hours depending on the size of the chicken.

Preheat the oven to 220 degree celsius.


Remove the rub with your hands - salt the chicken slightly - and in the oven it goes.
