B'soffener Kapuziner




Nothing brings back a summer day from my childhood as vividly as having B'soffener Kapuziner. Nothing was more refreshing. Nothing better.

As a dessert, it really stands out. Visually, it can't quite compete with themed cakes and piped cupcakes. Descriptively, it's also not easy: "Nut cake with cold cider."


It makes up for all this with two things:

a) a super cool name

b) a unique juiciness


You have to try it to judge it. So get to baking... the next heatwave is on the way:


Kapuziner:

4 eggs

140g sugar

140g nuts (here finely ground walnuts)

50g breadcrumbs

1/2 tsp miso (here: chestnut miso)

1/2 tsp baking powder


Cider Glaze:

2 tbsp sugar

50ml water

300ml apple-pear cider (wine also works)

1 small cinnamon stick


Separate the eggs. Beat the egg whites with half of the sugar until stiff peaks form. Beat the egg yolks with the remaining sugar and the miso until the mixture becomes lighter in color and thick. Then carefully fold in the breadcrumbs, nuts, and egg whites alternately with a rubber spatula or wooden spoon. The batter should remain as fluffy as possible.

Either fill a Bundt cake mold or, as shown here, portion into Rex/Weck jars.

Bake at 180 degrees Celsius in a preheated oven for about 15-30 minutes (depending on the form). Check with a toothpick to see if the cake is done inside; if not, continue baking.

I then leave the oven door slightly open and let the Kapuziner cool in the residual heat. This way, they don’t collapse as much.


For the cider glaze, lightly caramelize the 2 tbsp of sugar in a pot. Once the sugar has melted, add the water and cider. Bring briefly to a boil, then add the cinnamon stick. Cover and let steep.


Once the Kapuziner has cooled, pour half of the liquid over it and chill. I add the remaining liquid just before serving. The cake should be soaked with the liquid.

It tastes wonderful with a big spoonful of whipped cream on top. I like the Kapuziner as cold as possible, so keep the cake and cider glaze in the refrigerator.


For those who don't want to use alcohol, kefir water instead of cider works wonderfully too.
